Bored

It's Saturday night and I'm home alone.  Mark's moonlighting it at the hospital, so it's just me and the ol' internet tonight.

Some life updates:

We've been married for almost a month now!  All of our gifts have found a home here in the "condo".  All of the thank you cards have been written.  Except for three.  Why can't I just write these and be done?!  I'm also super psyched to get our wedding pictures back from the photographer.  She was amazing!

Mark was just offered a full time position at the hospital and he should start his new hours sometime next month!  Congrats baby!

School is winding down.  Only 6 more days left!  It's been great so far, we are just starting to get into the meat of learning our profession.  So intimidating and exciting at the same time.  I have all of August off.  I suppose I need to get my lazy butt out into the world, find a job, and start pitching in around here! 

Next weekend we are going camping with my sister (Jordan) and her husband (Jon) and possibly another couple.  I love camping!  The peace and quiet, the campfires, the smores, long walks through nature, the rain, the tent (that leaks), the air matress (that leaks), raccoons stealing our food, the lack of clean facilities.  Wait...why do I love this?  Oh yeah...it's vacation.

The Bachelorette: First Impressions

But first I must say that I cried like a baby watching the LOST finale last night.  It was a good thing Mark was at work cause he would have been rolling his eyes at me.  I'll admit I wasn't one of the "super fans" of this show, but today when I woke up I felt a wierd sense of mourning.  I get emotional with TV sometimes.

Now on to The Bachelorette! 

Ali is this seasons Bachelorette.  She is the girl next door type that guys love.  She is cute but she's got some little teeth.  I always look at peoples teeth idk.  Her favorite color is yellow and she likes to fish.  Will any of these guys pick up on that? 

The dress she wore tonight was a black full length gown with a train.  It had no back and was low cut in the front making for some awkward moments of near "wardrobe malfunctions" whenever she hugged one on the guys.. How's that for a first impression!

This episode was not without some drama in the form of a "Ballot Box".  Each guy was to submit the name of the guy they felt was "here for the wong reasons".  Remember Wes from Bachelorette Jillian's season?  I thought this was totaly unfair and I'm glad they didn't boot the guy who eneded up with the most votes and left it up to Ali whether to cut him or not.

Here are my first impressions of the 25 guys.

Frank:  You are a little bit over the top, but funny.  You gave up your career to do something you love and Ali really likes that in a person.  You get a Rose.

Jay:  I'm sorry but you have a really stupid haircut and you called her "Sweetie" too much.  You do not get a rose.

Craig M.: I wont hold it against you that you are from Canada but you seem like a real douchebag.  Your crazy tie caught Ali's attention.  You get a Rose

Kyle:  The self proclaimed "Mountian Man".  You've killed a bear and many other animals but you couldn't capture Ali's heart.  You do not get a rose. 

Justin AKA "Rated R":  The pro wrestler.  You were singled out by all the guys as not being here for the right reasons (which seems to be the new theme for The Bachelorette) but Ali decides to give you a chance and gave you a Rose

Phil:  Your dead brother inspired you to train for triathelons.  Good for you.  But you do not get a rose.

Jonathan:  The Weatherman from Texas.  You were also really funny, but be careful of talking to much and dominating the conversations.  I see future clashes between you and Craig M.  You get a Rose.

Ty: The Tennessee country boy with the big ears.  Your're divorced but have yet to disclose that to Ali.  You get a Rose.

Chris L.:  32 years old.  You left your job to be with your family while your Mom was dying.  A true man to the core.  If Ali doesn't keep you til the end we might be looking at the next Bachelor!  You get a Rose.

Roberto: The only minority on the show.  SUPER cute and Ali really digs ya because you win the First Impression Rose!

Tyler V.: We didn't see much of you this episode, but you have a sweet voice and a quiet demenor.  You get a Rose.

Derrick:  Oh Derrick!  Or should I say "Shooter".  Please don't ever tell any one the story behind your nickname.  Premature ejaculation is not funny or cute to women.  You do not get a rose.  Duh!

Steve:  You have dark curly hair.  That's all Ali knows about you right now.  You get a Rose.

John C.:  You want to be the guy to propose to Ali....so you did.  With a fake ring.  Not a good impression (since you are slightly gayish) but an impression none the less.  You get a Rose.

Kirk:  Did you learn to make roses from paper napkins just for Ali or is that your pick-up line for all the ladies?  You also made her a scrapbook.  I guess if Ali gets cold you could knit her a sweater too?  Your crafty and you get a Rose.

Chris H.: You were the first one out of the limo...I guess that counts for something.  You get a Rose

Jesse:  A peculiar man from Peculiar, MO.  You caught Ali's attention with a homemade necklace.  You get a Rose.

Chris N.:  You gave Ali a real rose (pay attention Kirk) and she gave you a Rose.

Kasey:  Your voice drives me crazy.  It sounds like you have a flem bubble in your throat.  You get a Rose.  Please clear your throat.

John N.: Who are you?  You do not get a rose.

Craig R.:  The instigator.  It must stem from the fact that your the least attractive of all the guys.  Nothing says love like a yellow tennis shoe keychain.  Well, Ali liked it anyway.  You get a Rose

Hunter:  You wrote Ali a song on the ukealele that was funny and cute, but your treating this show like a competition.  You have been warned.  You get a Rose...barely.

Derek:  You brought a bunch of dirty leaves and threw them all over the Bachelorette.  Not cool.  You do not get a rose.

Tyler:  You wore cowboy boots because you saw Ali wear a pair on last season's The Bachelor.  Only that wasn't Ali.  Thanks for making me laugh tonight.  You do not get a rose.

Jason:  The last guy out of the limo and you did a back flip off of it!  Impressive but your bad attitude is not.  You do not get a rose. 

If the emotional Exit Interviews from the 3 guys who had their's aired is any indication of the rest of the group, I'd say we have another drama filled season coming up!

Late Late Nights

Mark is an ER nurse who works 12 hour night shifts.  That means he goes in at 7 pm and gets home around 8 am the next day.

This makes his sleep schedule the total opposite of mine.  He's a vampire and I'm the girl in love with the vampire.

Hmmm....vampire nurses... that could be a great TV show!

I often wonder what he does while I'm upstairs in dream-land. 

Maybe he shops online for new clothes, prices out vacations to Disney World, and checks up on his favorite blogs and message boards.  

Oh wait....that's what I do.

Mark probably researches motorcycles, how to brew his own beer, and eats Doritos.

Yeah I'm pretty sure that's what he does.

$1 Brownies

I forgot to post last Friday and this Monday but know this my friends...

they were the best Friday and Monday I've had in a long time.

I'm 4 days away from leaving my job!  says the girl in a recession


I made brownies last night. 

They were the kind from the box and I bought them because they were only $1.  And that makes them less fattening.

It's a fact.

In my mind, why would anyone want to eat a tiny candy bar for $1 when they could eat a whole pan of brownies for $1?  Don't argue with me sweetie. 

These weren't the best brownies I've ever had. 

I cooked them a little too long so the edges are extra extra crispy.  I like my edges chewy but not too crispy.

They are super flat and dry.  Like a desert.  Oh!  Maybe the box said desert brownies not dessert brownies, in that case I only blame myself.

And their most disappointing quality...not chocolatey enough!  Ugh!

But none of that stopped me from eating 1/4 of the pan last night!

Thunderstorms and Mickey Mouse

It has been gray and rainy here for the past 3 days.  It is so blah.

Last night I dreamed I was in Disney World with my family and we were in the middle of a nasty thunderstorm.  For some reason I didn't have the proper shoes on so I had to search all over the Magic Kingdom until I found some.  It took forever and when I finally found a pair (which were NOT good for rain or Disney) and tried to pay for them the cashiers were sooo slooww!  Ugh your cutting into my park time!

When I woke up, it was thundering and lightning outside and I was sad that I never had time to ride Space Mountian.

I think I dreamed about Disney because A) I really want to go back there B) The Pioneer Woman is there right now and she is blogging about it and C) I really really really want to go!!!

Here are my Top 7 Favorite Things about Disney:

7)  The Monorail: I could ride that thing for hours just listening to the announcements and looking out the window.  Ahhhh.

6)  Mickey Ice Cream Bar:  Sure it's just ice cream covered in a chocolate shell, but it's shaped like Mickey Mouse and you can only get them in WDW!

5)  The Polynesian Resort:  This is the first on-site resort I ever stepped foot in and I haven't stopped dreaming about staying there since. 

4)  The Hunted Mansion:  The coolest, creepiest, silliest hunted house ride ever!  And the only haunted house I'll ever be caught....dead in....Muahaa! 

3)  The World Showcase:  Shop, snack, drink, and walk your way through 12 countries in about an hour!  My personal favorites are Germany, Japan, and Morocco.

2)  Fireworks:  Walt Disney World has some of the best firework displays I have ever seen.  And they do these shows every night 365 days a year!  All set to music and lights of course.

1)  Mickey Mouse:  I'm pretty sure these were the first words I learned to spell.  Every time I see Mickey Mouse in person it's hard not to be star-struck and turn into a little kid again.

I'm going to make Mark promise to take me there after I graduate and you better belive we will be staying at The Polynesian!

Life Without Cable

We don't have cable tv at the "condo".  We have an antenna!  We get 8 channels!  Woo hoo!

Here are the channels we get:

CBS:  Good for Jeopardy! and The Amazing Race.  But not much else.

CW: They play reruns of Rosanne (remember when they won the lottery? talk about jumping the shark!).  I used to watch the New 90210 here but not so much this season (Silver's a lesbian with Bruce and Demi's daughter? WTH?!)

NBC:  This might be my favorite network.  I always watch the Today Show before work.  And Parenthood is my favorite new show!  My Thursday nights are consumed with Community, Parks & Rec., The Office, and 30 Rock.  So funny!  What makes me crazy is that this station loves to disappear randomly and screw up my world.

WXSP:  Useless except for Scrubs and King of Queens reruns. 

FOX:  One word...Glee

ABC:  They have finally got some funny programming on here.  I love Modern Family and Couger Town (I wish I could drink wine with them all day!).  The Bachelorette is starting up soon!  I hate their choice of girl (Ally from the last season of The Bachelor) but I'll probably get sucked into it.

PBS:  I definately feel my age old when I can't stop watching Antiques Roadshow and This Old House, but there are no commercials so when am I supposed to change the channel?

CREATE:  A PBS type channel.  I am addicted to Americas Test Kitchen and Rick Steve's Europe.  I want to start a Euopean Vacation Fund!

Those are the best 8 channels we get.  We also get a Radar Weather channel, a What's On PBS channel, and a odd channel called W that shows programs from the other side of the world.

I don't really miss cable all that much.  I don't think my life is suffering because I can't watch Jersey Shore or Desperate Housewives of New York. 

Yeah I'm ok.

Ten Days...Ten Meals

So in my last post I talked about when my last day at Company X would be.

Rambled was more like it.

I kind of left it saying I'd be done on the 14th. 
Well...my conscience got the better of me and I've now flipped to the 21st.

I had "the talk" with my boss this morning!

So to honnor my impending release from this prison I thought I would post something on each of my remaining 10 days.

Today I going to list the Top 10 cheap meals I will be preparing to eat frequently once I'm unemployed.

Money or Sanity

Remember the old Economics question "Butter or Guns"? 
You don't?
It's ok.  I only got a 'C' in Economics and I'm a little fuzzy on it too.

Anyway...my question lately has been "Money or Sanity".

You see many months ago (I'm talkin like last September) I decided that my last day of work would be April 30th.  No ifs ands or buts. 

Then in March I found out I got into the Radiography Program!  I started thinking about how much money school is going to cost and I'll need to look for a part time job and it will most likely pay less than I make now and how much longer can I make this sentence...
I decided to work up to May 28th so I could stash the extra cash for school.

Then in early April I decided that my last day would be May 25th, because that is the end of a pay period.  It's a very good excuse indeed. 

Then Tuesday I found out I might have to retake a class that would begin on May 18th so I decided my last day would be May 14th. 

Today I found out I don't have to retake the class!  So now my last day will be May 21st.

But that May 14th started to look mighty friendly to my fragile mind. 

Can my sanity really endure 4 more weeks of torture?  Butter or Guns?  Butter or Guns?

You know what?  Screw it!  I've been working in this $*!# hole for 5 1/2 years and I'm a miserable person because of it.  I'm gonna get happy in T minus....I can't do it...I can...21 days!

Stick that in your pipe and smoke it!

You Want Me To Stick That Up Where?!

Yesterday I worked a half day.  The rest of the day was spent at the college for my Radiography Program Orientation Meeting.  Me and 19 of my new "best friends" sat in our classroom for 3 hours and got the low down on what to expect for the next 2 years of our lives.

It was meant to scare us.  And I admit I did leave the college with a headache.  And I was questioning if this is the right path for me.  Here are a few the things that scared me:

1 hour spent in the classroom means 3 hours of homework.  Average class time per day: 3 hours.
You do the math.

We are going to learn to start IV's.  I hate needles and almost fainted when I had to get one.(shudder)

I (may) have to take EMT 110 over again because I took it 3 years ago.  EMT 110 is a Medical First Responder class.  I hate retaking classes I've already aced!

The cost!!!  It's close to $9,000.00 for a resident and I'm a non-resident so I pay more!

Barium enemas.  That's right.  Google it.

I also need a physical and blood tests.  More money out of my pocket.

This is going to be hard work, but I have an amazing husband and family to support and encourage me.  I'll be doing a lot of praying too I'm sure, but the one thing I have to keep telling myself is why I want to be a Radiography Tech (RT).  If I can make the time I spend with a patient the best part of their experiance in the hospital then I've done a good job.  And that's what my goal is.

Leaving On A Jet Plane

In honor of March Madness and the desire to wager one's finances on sporting events, my dear Marky is leaving for a guys only Las Vegas trip this afternoon.

I told him to behave, play nice with his friends, and don't spend all his money.

I won't worry about him too much because he's responsible...it's the others I worry about.

And that is why I married him and not them.

Since he will be gone all weekend, I'm still trying to figure out what to tell Sister Bernice about Mark's where-abouts at church on Sunday. 

He told me not to tell her he's in Sin City.  I doubt she will believe I don't know where he went on vacation.

Besides...I can't lie to a nun!!!

Valentine's Day and Chocolate Pie!

Well, I meant to put up the Sunday Scripture and Chocolate Pie posts yesterday, but I was so busy that by the time Mark and I had any time to relax together it was 4:00pm!  I realize that's not too late to post, but I wanted to spend the rest of the day with my sweetie...not the laptop.

I left for church at 9:05am and was there until 11:45am.  Father Farrell gave a great talk on the Eucharist.

Then I headed to my old apartment to clean and pack a few things.  And vist the washer/dryer.

My parents came down around 1:00pm to pick up some furniture that we don't have room for in the "condo".  Two stools, two club chairs, a bed, tv, and tv stand.

Mark showed up at 1:30pm to help my dad get things into the van.  Why was he late?  Buying Valentine's Day gifts perhaps?

Then we all drove (in seperate cars) to Penn Station for lunch at 2:30pm.  I love Penn Station.  It's a sub sandwhich place and they have the most mouth watering Philly Cheesesteak sandwiches!  Unfortunately I ordered the Club and it wasn't as good.

Shortly after 3:00pm we went to the "condo" for some chocolate pie!  Everyone loved it!  I was very rich.  I offerd a glass of milk to go with it but everyone passed.  After my parents left at 3:30pm I realized that I forgot to top the pie with whipped cream!

A travesty indeed!

Now without further ado...the Chocolate Pie!

This picture is to prove that I make my own pie crusts from scratch.  This one was in the freezer so I took it out for 20 minutes to thaw before rolling it out.



Great things are in your future young pie crust.


To make sure the crust doesn't puff up too much I lined the inside with foil and weighted it down with dried pinto beans.  Then I popped it in a 400 degree oven for 30 minutes.  Check on it after 25 to see if it's golden brown.


Don't worry!  You wont be alone much longer!

Next I mixed up the pie filling.  I dont have pictures of this part but here is a description of what happened.

In a small microwave safe bowl melt 4 oz. of unsweetened baking chocolate.  Let it cool.

In the meantime beat 1 cup of softened butter and 1.5 cups of granulated sugar in a large bowl until fluffy.

When the chocolate has cooled add it to the butter mixture.  Add 1 tsp. vanilla.  Beat until combined.

For the next 15-20 minutes your arms are gonna get wicked tired (unless your lucky and have a standing mixer, which I don't.)

You're going to add in 4 eggs, one at a time, beating 4-5 minutes for each egg. 

Here is the filling after beating it silly for 16 minutes.




Hey there smooth, dark, and handsome..

Now spoon the filling into the pie shell and smooth out the top.

Bee-you-ta-full!


Oh my.  Oh oh my.

Put this baby in the fridge for a couple hours (longer is ideal).  Then slice it up and top it with some whipped cream.  It is positively moan-worthy!

This pie is so naughty...be careful who you feed it to.

The Apartment and The Condo: A Kitchen Comparison

I thought I would to a little picture comparison of my old apartment and the new "condo". 

BRIE'S NOTE:  Please excuse the mess.  I was moving in/moving out in these shots so it's in that disaster phase at the moment.

Also, "condo" is in quotations because it's not really a condo in the condominium sense of the word.  It is an apartment that was sold to Mark therefore it is a "condo".

I'll start off with a kitchen side-by-side.  After all it is my favorite room in any house!

Here is a picture of the kitchen in my old apartment (OA):


It is pretty decent sized.  I was happy it wasn't one of those gally style kitchens.  It had plenty of counter space which was awesome because I cook a lot and needed it.

Here is the one thing I miss the most about my OA.  The washer and dryer!  I am mourning it as we speak.  The "condo" has a community washer and dryer in the basement.  Boo.

Yeah.  It hits the dang washer!  And here is what it looks like when you open the vegetable drawer.


It was kind of a pain in the butt.  But oh if I could have that wahser dryer back right now!

It's very open.  It has new cabinets from IKEA. 

But get this...no drawers! 

Nope not a single one.  WTH were the owners thinking? 

Mark made one drawer and it's for cooking utensils.  How annoying! 

I didn't really gain any counter space here, but the island is nice if there isn't crap piled on top of it.


This is the oven.  I dislike it for two reasons.

1.  It's tiny. 

2.  It's electric. 

Oh and it's FILTHY!  Goo!

I used it today to bake a pie crust.  You can see it tomorrow!

What Will You Give Up?

The Lenten season is fast approaching which has led me to think about what I want to give up this year.  Last year I gave up the internet.

The internet.

It was very difficult which was part of the reason why I choose to do it.  I limited myself to only checking my personal email twice a day and of course anything work related was allowed.  My work day is 10% work, 5% lunch, 85% playing on the internet.

I tell you what, I sure had a lot of extra time to pray!

I'm considering doing it again for Lent this year.  My prayer life needs some work and I think it'll be a great opportunity to memorize some prayers. 

Fat Tuesday is next week and I love to indulge in sweets on this day (and the days leading up to it!).

This year I am going to make a chocolate pie (a Pioneer Woman Recepie).  I'm a little leary of the 4 raw eggs in it, but it looks so creamy and yummy!  Plus I have a frozen pie crust that needs to be used...so.

Workout Day 10?

I've already lost count on what day we are on.  All I know is that we are still on track and feelin' great!

I can finally walk up and down stairs without wincing in pain!  That's progress people!

The leg workout last Thursday was particularly brutal and I felt 80 years old all weekend trying to walk, get in and out of cars, get off the couch, and the worst...getting off the toilet seat.

I've never wanted a padded toilet seat so bad until that day.

In diet news, I'm still watching what I eat.  I'm very careful to eat every 3 hours. 

As you know there was a certian event last Sunday that included beer and lots of junk food.  I displayed some self control by only drinking 2 beers. 

And a couple handfulls of reduced fat potato chips (Cape Cod Reduced Fat Potato Chips rock!)

And some meatballs.

And three chocolate chip cookies.

And I don't feel bad about it.  So there.

I probably wont update too much about P90X on here anymore, but if we have some breakthrough or injury we'll let you know.  And I'll be sure to show the before and after shots when the 90 days are up so stay tuned!

Still Blessed

I just found out that I'm getting a paycut at work.  3%

My boss came into my office, shut the door, and started talking about profit loss and letting employees go...I thought I was losing my job for a second!

That's would have been fine with me because I hate this job so much. 

But I realized that I'm blessed to have this job.  For whatever reason God wants me to be here now.  He knows there is something I need to learn from this experience.  It's a daily struggle for me to be here, but I show up every day on time and try my best.

The good news is I'm only here for another 12 weeks.  After that I'll be going back to school to earn my Radiography degree!  (if i get into the program!)

While the crowd was pressing in on Jesus and listening
to the word of God,
he was standing by the Lake of Gennesaret.
He saw two boats there alongside the lake;
the fishermen had disembarked and were washing their nets.
Getting into one of the boats, the one belonging to Simon,
he asked him to put out a short distance from the shore.
Then he sat down and taught the crowds from the boat.
After he had finished speaking, he said to Simon,
“Put out into deep water and lower your nets for a catch.”
Simon said in reply,
“Master, we have worked hard all night and have caught nothing,
but at your command I will lower the nets.”
When they had done this, they caught a great number of fish
and their nets were tearing.
They signaled to their partners in the other boat
to come to help them.
They came and filled both boats
so that the boats were in danger of sinking.
When Simon Peter saw this, he fell at the knees of Jesus and said,

Don't be afraid to do things you know are difficult for you.  Jesus will always be with you.

Workout Day 5: Legs and Back

I did the Leg and Back workout by myself last night after work. 

I emphasize by myself.

Mark was too busy purchasing supplies for our bathroom remodel to be bothered to workout yesterday.

Don't get me wrong, I love his sudden inspiration to get the bathroom redone before I move in.  However he does this alot. 

He is an expert at finding "legitimate" excuses to avoid things he knows he should be doing.

Don't get me wrong, he's not lazy and I know he's committed to P90X right now.  However he needs help in the time management department. 

He knows this, because when I called him out on it...he laughed.

Don't get me wrong, I love him to death.  However...however...

I love him to death!

Wedding Food and Yoga

Yesterday at 4:00 Mark and I had a date with our chef to taste some dishes for our wedding reception.  I was good and hungry by the time I left work.  Thoughts of savory beef and chicken clouded my head and made it very difficult to find parking downtown. 

I can never find parking downtown.  I hate it.

Mark and our wedding coordinator Rene were already there waiting for me. 

I'm never late for anything.  I hate it. 

We talked for a little bit, then Chef came out with the food!

I planned on having Mark bring the camera so we could take pictures, but I would have felt weird doing that in front of the chef, so I "forgot" to tell Mark to bring it.  Sorry!

The first dish we tried was: Slow Roasted Strip Loin Medallions prepared medium rare and served with a wild mushroom and peppercorn demi-glaze.  It also had a side of Smashed Redskin Potatoes and Sauteed Green Beans with Tomatoes and Shallots.

This was really good!  I loved the demi-glaze and the potatoes the best.  The meat was very tender and the vegetables were crisp and not rubbery.

The second dish we tasted was: Chicken Breast stuffed with Herb Goat Cheese, Oven Dried Tomatoes and Spinach served with Asiago cream sauce.  It came with an Au Gratin Potato Wedge and Sauteed Asparagus. 

Oh yum!  I loved the stuffing in the chicken and the plate looked gorgous!  I also liked the au gratin wedge and asparagus has always been a favorite of mine (stinky pee aside!).  I ate all this up!  My favorite for sure!

The third dish was: Sauteed Whitefish rubbed with lemon and garlic and served in a lemon butter sauce. 

This was our least favorite.  The fish had a "fishy" taste like maybe it wasn't fresh?  Also I'm pretty sure I told Mark I wanted to try the Almond Crusted Walleye.  He sent the email with our requests to Rene so maybe he wrote down the wrong one?  I forgot to ask him. 

We left with the idea of serving our guests a combonation plate of chicken and beef served with sauteed asparagus and smashed redskin potatoes.  Rene will get us the quote sometime next week so we can see the numbers.  I would be ok with just doing chicken for everyone.  Yummy!  I want more!

At my sisters wedding they served everyone chicken and I ate mine and everything my sister left on her plate.  One of the benefits of being the maid-of-honor and sitting right next to a nervous bride!

We didn't get to taste any of the appetizers being served at our cocktail hour.  I was bummed because it's likely that we wont actually make it to cocktail hour because of pictures and what-not.  Oh well. 

Our wedding is almost 4 months away now!  I have to get my butt in gear with all the details now.  I've been draggin' it for awhile.

Yoga!
Mark and I did the Yoga X dvd last night.  It was a little over an hour and a half long!  It was tough too!  Lots of challenging poses and there were some that we couldn't do without falling over.

Workout Day 3: Shoulders & Arms; Abs

Mark and I did this workout before he went to work last night. 

I really like all of these workouts.  They are challenging enough that I know we'll be doing them for months to come. 

The Ab one was super difficult though.  My stomach resembles a deflated clown balloon, so I think it'll be awhile before I can do every crunch along with the dvd.

My arms are sore and a little tight today, but it feels great to know I'm using those muscles that don't get worked too often.

I'm gonna have some mad guns to show off in my wedding dress!

In Other News...

Mark and I have our menu tasting with the caterer today at 4:00pm. 

I get to leave jail early today!  Yay!

We will be tasting our appetizers, entrees, and potato side dish.

I'm skipping afternoon snack today so I can be extra hungry for all the tasty food!

Workout Day 2: Cardio

"It's time to get rid of the gristle and gunk!"

Oh Tony you have such a way with words.

I did the cardio routine yesterday.  I thought it was really great!  I paced myself this time and when I couldn't stay in tempo with everybody, I just went slower. 

There was just a few minutes left of the workout when Tony called out my least favorite exercise...

The Dreaded Superman Banana!  Dun-Dun-Duuuuun!

This torturous exercise has me lying on my stomach with my back arched, arms raised out in front of me, and my legs raised off the floor about 4 inches. 

That is the Superman part.

Then Tony yells, "Banana!", and I have to use my core muscles to flip over on to my back then raise my feet and arms up about 4 inches.

Sounds easy enough but when I'm in the Banana position I can't get my legs off the floor one millimeter!  It's like they suddenly weigh 2,000 pounds! 

Then Tony starts calling out the positions faster: "Superman, Banana, Superman, Banana, Superman".  Anyone who walks in and sees me at this point would think I'm either having convulsions or trying to put out an imaginary fire.  It's really quite humorous.

I am a bit sore today, but it's a good sore. 

The diet is going well too.  This has been the best week yet as far as tastiness goes.

Breakfast:  Protein Shake (chocolate flavored of course)
Morning Snack: Mozzarella Cheese Stick
Lunch: Chicken Salad over Baby Spinach and a cup of Vegetable Soup
Afternoon Snack: Protein Bar (the Zone bars are really good)
Dinner: Talapia with Pesto Sauce, Green Beans, and Wild Rice

Workout Day 1: Core

For Christmas this year Mark and I decided to forgo all the expensive presents and give eachother the gift of 6-pack abs and a tight butt.

We bought the P90Xworkout program, weights, resistance bands, pull-up bar, and yoga mats.

We are just now getting around to using them! 

If your not familliar with P90X it's that crazy workout infomercial you see on the weekends.  It was created by Tony Horton and it's 90 days of intense workout and dieting. 

There are different levels to the program.  I am doing P90X Lean.  It focuses more on cardio and building lean muscle mass.  It has less upper body exercises, which is good for me 'cause I can't do a pull-up to save my life!   Mark is doing P90X Classic, 'cause that's the kinda guy he is.

My workout yesterday was Core Synergistics.  It focuses on the core muscles of the stomach, back, glutes, and hamstrings.  How do I know that?  Because I'm sore in all those places!  I had a hard time doing a few of the exercises and sometimes I could only do it once.  I was tired halfway through and I breifly wanted to shut it off, but I didn't and I'm glad I made it through to the end!  I know I'll look back in 90 days and think "I thought this was hard?"

Mark had 2 workouts his first day!  Chest and Back and Ab Ripper X.  I could hear him grunting and groaning the whole time, while I was cleaning out my bedroom closet.  I also heard him laugh a few times.  Tony Horton will say the most off-the-wall comments sometimes and you just have to laugh!

"Superman!  Banana!  Superman!  Banana!"

Every Sunday I will post the daily scripture that spoke to me in Mass that day.  I'm a day late, but I didn't have access to a computer yesterday.

A Reading from the First Corinthians 13:4-13

Brothers and sisters:

Mushrooms Stuffed with Brie



First off let me apologize for this horrible picture.  Mark did not take this.

He wanted me to tell you that.

What I should have done was displayed them on a nice serving dish and let Mark click away, but he was napping when I made these.  And he really doesn't care for mushrooms, unless they come from a can.

What?! 

It's ok.  I love him still.  And I get to eat these all by myself!

I got this recepie from my mostest favoritest blogger The Pioneer Woman I can't get enough of her blog!  I bought her new cookbook too. 

Her apple pie recipie is the reason Mark is marrying me. 

Not really.  I think?

That's another story for another time perhaps.  Perhaps.

Here is the list of ingredients:

3 tablespoons Butter
1 package White Button Mushrooms, washed and stems removed
4 Garlic cloves, minced
1/4 cup Fresh Parsley, chopped
4 whole Green Onions, sliced (up to middle of dark green part)
Splash of White Wine (optional for you) but for me, essential!
1 wedge of Brie Cheese (any brand)

Preperation Instructions:

Preheat oven to 350 degrees

Melt butter in a skillet.  Add mushroom caps and toss to coat in butter.  Sprinkle lightly with salt and cook for 1 minute.  Remove mushrooms from skillet and place stemmed side up in a baking dish.

In the same skillet (without cleaning it) throw in the garlic, parsley and green onions.  Sprinkle lightly with salt and splash in wine, if using.  Then pour yourself a glass and relax.  Stir around until wine evaporates, about 1 minute.  Remove from heat.

Cut rind off brie wedge, then cut pieces of brie to fit each mushroom cap.  Place inside, lightly pressing to anchor each piece of brie. 

Top mushrooms with garlic/parsley/green onion mixture.

Place in oven for 15 minutes or until brie is melted.

Your kitchen will smell amazing!

Cool slightly before eating.  This is the hardest step!

The brie gets really soft and creamy.  The herb mixture adds unbelievable flavor!  Give these a try this weekend!  You wont be sorry!

Rebirth

Forgive me father for I have sinned.

Oh wait a minute...I'm not a Catholic yet, and technically I've done nothing wrong here except neglect the crap out of this poor unfortunate blog.

I hope this is not an indication of my future parenting skills!

I truely intend to get this thing up and running, but with a few changes.  And boy does this one need changing!  Pee-u!

My spell check recognizes "Pee-u" as a real word!  That cracks me up!

The original intent of this blog was to delve into the expansive world of cheeses and taste, cook, and learn about them.

I got about as far as a worm on a rainy Sunday.

I made that up...do you think it will catch on?
